Last week, I thought it would be amusing to set myself the challenge of having a different, tasty, healthy wrap each day (hmmmm, maybe I need to get back to work? Ha ha ha ha!)
Seriously though, wraps are a great, quick lunch. Easy to prep, and even easier to eat, great for a lunchbox and handy if you are on the run or child wrangling.
The wraps themselves can be bit heavy on calories so I have balanced this with a small amount of protein and a pile of salad. I find that I stay full all afternoon and I get some of my “2 and 5” as well! If you want to cut back on calories, swap the wrap for a piece of mountain bread, but you will need to go lighter on the filling – they are quite spindly.
I’m on Weight Watchers at the moment, so all of these are between 8 and 10 points which is a pretty standard lunch for me in terms of calorie intake.
So here’s the result, all in all I’m wrapt*!
Monday – The King Tut
- This one tastes kinda like a falafel kebab with a gazillion less calories.
- Spread the wrap with greek yoghurt
- Sprinkle over some dukkah
- Add a pile of parsley, then a grated carrot
- Throw over some blobs of canned beans (I used butter beans) mashed with lemon and cumin (about a third of a tin)
- Add a squeeze of hot sauce (I use the red one from the Asian grocer)
I’m massively NOT a fan of tuna but if you are, it probably would be okay on this one.
Tuesday – Monsoon Madness
This is one that used some leftovers from the night before. I make a super-quick, Indian-inspired dinner by flattening some chicken breast and frying in coconut oil with cumin, turmeric, garam masala, cardamom and curry leaves.
- Spread the wrap with tomato chutney – I didn’t have any so used home-made capsicum and tomato dip
- Scatter over the leftover Indian chicken
- Add your leaves and cucumber
- Dollop over some chilli raita
Wednesday – My, How Fet-ching
- Use avocado as your base
- Pile on your spinach leaves, some tomato and fresh basil
- Break a matchbox-size chunk of feta over (I love the Baramba marinated feta)
- Drizzle with lemon, olive oil and plenty of salt and pepper (tomato loves salt)
You could replace the feta with haloumi if you feel like cooking some – YUM!
Thursday – Moby Dickwrap
I’m a huge fan of this classic combo. In this case it would’ve been better with some rocket and dill but I didn’t have any.
- Slather on some cream cheese
- Chuck on a couple of slices of smoked salmon
- Drop on as many or few capers as you like
- Add the salad of your choice
- Finish with a squeeze of lemon (and dill if you have some)
Friday – The Godmother
- Spread tapenade over the base
- Pile on your salad of choice; I used lettuce and tomato
- Sprinkle over some olives
- Drape over some prosciutto
- Finish by scattering some torn mozzarella or bocconcini
Basil or parsley would’ve been tasty too on this one but I forgot. And you could easily add some antipasto ingredients to this one, like artichoke hearts or semi-dried tomato.
